I am salivating over here - I must try your aubergine dish when the season gets going here. Wow! We have an Israeli store in the town where I live and I have access to amazing hummus and pita bread, and some great pickles too. All that stands between me a Sabich is making the aubergine, some eggs and a chopped salad. I will totally groan with delight haha. Love your writing, Lizzie, congrats on your first year as well!

Thank you – and for all your support this year! Sounds like you are well set up for your first Sabich – and the aubergine is SO easy to do! And when you eat it, you might like to think of a small girl with bright red hair who lit up my village – and then the world – with her amazing spirit and delicious bread. Kitty Tait is now grown up, but she was 12 when she started out as a baker. She was one of the most inspiring people I have ever met, and it’s her pita recipe, and was her suggestion to make Sabich. Have a lovely day.

Lizzie we had Sabich for dinner - groan inducing for sure!! The eggplant is so absurdly good, and you are right, EASY! Thanks also for shining the spotlight on Kitty Tait - subscribed to her right away.

Oh, I’m so glad you enjoyed it so much! And I did not know that Kitty had a substack – I know about her and her amazing work because I used to live in the same village as her – about 10 houses away – and she just used to light up the whole village – and I was in the first, street-long queue when she started her pop-up bakery. So have now subscribed too!
