The tree takes advantage of width and perspective to upstage the Shard, and is not that tall... Don't encourage it.

Also, it’s new to me to cut onions with rings rather than against them.

Any theory behind that?

There’s a theory that it makes them slightly milder and they cook better. It will certainly have an effect on the structure.

I tried cutting them that way tonight for another dish - I think they did soften up more quickly and more thoroughly

It doesn’t seem to. I think that as well as affecting the flavour, they are also easier to cut.

Will cook the quiche this week for Calderstones Volunteer Gardeners- some vegetarians and some gluten-free, perfect audience. But dear Diva, my quiche tin has a loose bottom (do excuse this personal information). Looks like you’ve cooked yours in a solid bottom enamel… any advice?

I cooked it in a ceramic dish – for the same reason! There’s a lot of it about! Would have been better in something metal, but it was still very good. Hope you have a lovely day!
