Great recipes! I never seem to have much luck with eggplant as us Americans call it.-lol. Either too oily or not cooked enough. But how do you manage to have pomegranate all the time. Can’t seem to get them here except in the fall when they are in season. Several trees in our neighborhood in fact! Thanks as always Lizzie for such great ideas!!

I can get pomegranates pretty much always in England – because they are not too fussed about seasonality – but not in Italy
