Great story! Although if all you do is eliminate the sugar and ultra processing, giant amounts of fat and salt aren’t really that bad.

Thanks Tim. Apart from a bit of moderation in most things is usually a good idea, it is definitely the ultra-processing that makes it so bad.

Thank you Lizzie - I don’t think I understood the relationship of sugar to fat via insulin properly - now I do! A question re lentils - for recipes such as these do you ever cook them in stock (vegetable or chicken)?

Re lentils and stock – yes, absolutely! I realise that I need to write about my complicated relationship with stock – to do with my mother's stock pot, and what she put in it, and how many years she boiled it up, and the fact that it tasted absolutely disgusting..
